Cromesquis of foie gras and gingerbread with mango

- 250 g Foie gras
- 2 Cooked chicken breast
- 1 Mango
- 3 Egg
- 3 tranches Gingerbread
- 30 g breadcrumbs
- 60 g Flour
- Frying oil
- Salt and pepper
Start this recipe of cromesquis by removing the foie gras from the refrigerator about 15 minutes before working it. Cut it into cubes, then roll them in your hands to form balls. Place them on a plate, salt, pepper and reserve in the freezer for 30 minutes.
Finely chop the chicken breasts. Put them in a salad bowl, season, add 1 egg, then mix. Make small croquettes and slide in the center of each a piece of foie gras.
Toast the gingerbread, then mix it with the bread crumbs. Break 2 eggs on a deep plate and beat in an omelette. Pour the breadcrumb mixture into a second plate and the flour into a third plate. Roll the croquettes successively in the 3 plates, then reserve 15 min cool.
Meanwhile, peel and detail the mango in very thin slices. Heat the cooking oil. Immerse the pellets in small amounts in the hot oil bath and brown for 2 to 3 minutes. Drain on paper towels, salt, pepper and serve immediately with mango.
