Lasagna Bolognese Recipe

The advantage with Bolognese lasagna is that you have virtually no chance of being disappointed. Everyone likes it, as long as they're successful, of course. To do this, we invite you to follow the very simple steps of our recipe.

For the lasagna:<br /><br />

  • 12 Fresh lasagna sheet
  • 100 g Grated parmesan
  • 80 g Butter
  • 60 g Flour
  • 60 cl Semi-skimmed milk
  • Salt and pepper

For the Bolognese sauce:

  • 60 g Crushed tomatoes
  • 40 g Ground beef
  • 150 g Sausage
  • 100 g pancetta
  • 50 g Half-salt butter
  • 1 Carrot
  • 1 Celery stalk
  • 1 Yellow onion
  • 2 Clove garlic
  • 15 cl Red wine
  • 10 cl Milk
  • 2 sheets Laurel
  • Salt and pepper
  1. Bolognese sauce : Peel and finely chop the onion. Peel and chop the carrot. Taper and chop the celery. Peel and mash the garlic cloves. Chop the pancetta. In a saucepan, brown the mixture of vegetables and pancetta in the butter for 5 minutes, over medium heat and stirring constantly. Add the beef and sausage meat, increase the heat and brown for 5 minutes.

  2. Deglaze with the red wine, reduce by scraping the bottom of the pan then pour the milk and mix. Finally pour the tomatoes, add the bay leaf and salt very lightly. Simmer over low heat for two hours, half covering the pan.

  3. Bechamel : Melt the butter in a saucepan. Add the flour and mix for 2 minutes. Gradually pour in the milk, whisking, salt and pepper and leave to thicken for 5 minutes over medium heat. Remove from the heat and stir in half the Parmesan cheese.

  4. Preheat the oven to 180 ° C (thermostat 6). Butter a gratin dish. Place a first layer of béchamel sauce at the bottom of the dish. Place a first layer of lasagna sheets on top, then a layer of tomato sauce. Repeat this until all the ingredients are used up. Finish with a layer of béchamel.

  5. Sprinkle with the rest of the Parmesan cheese, put in the oven and cook for 25 to 30 minutes. Serve hot.
