Chinese spring rolls are better known as “pâtés impériaux” in France. They are rolled in cakes of chun juan prepared with wheat flour. Discover our recipe!
Ingredients
- 18 square wheat cakes or 18 square spring roll dough
- 250 g Beansprouts
- 2 boots Chinese spring onion
- 2 Whole eggs
- 1 Egg yolk
- 2 tbsp. soup Soya sauce
- 1 C. soup Sesame oil
- Sunflower oil
- Frying oil
Directions
- Start this recipe for fried spring rolls by heating a drizzle of sunflower oil in a wok. Add the beaten eggs to an omelette and cook them, mixing with a spatula. Get rid of on a plate.
- Wash and finely slice the chives.
- Heat 1 tbsp of sunflower oil in the wok, then fry the soy shoots for 5 minutes. Add the chives and fry for an additional 2 minutes. Add cooked eggs, soy sauce and sesame oil. Mix. Allow to cool.
- Place a wheat patty on the worktop. Place 1 tbsp of stuffing in the centre. Fold the three angles towardthe center, then wrap the patty by enclosing the filling. Weld the last angle with a little egg yolk. Make the other rolls the same way.
- Heat the frying oil in a frying pan over high heat, then brown the rolls for 2 to 3 minutes, turning several times. Remove as you go on paper towels, then serve.
