Mexican Chicken Soup

Ingredients

  • 1 L Poultry broth
  • 3 Chicken cutlets
  • 3 Potatoes
  • 1 Red bell pepper
  • 1 Onion
  • 2 cloves of garlic
  • 25 cl Tomato coulis
  • 1 C. coffee Cumin powder
  • 1 C. coffee Paprika
  • Salt
  • Chilli powder

For garnish :

  • 10 cl Thick cream
  • 1 small box But
  • 1 Lawyer
  • 1 small piece Red bell pepper
  • Spicy sauce

Directions :

  1. Start this Mexican chicken soup recipe by peeling and slicing the onion. Peel, rinse and cut the potatoes into cubes. Wash, seed and cut the pepper into pieces. Peel and crush the garlic.
  2. Pour the broth in a casserole. Add chicken and vegetables, cumin, paprika, tomato coulis, a few pinches of chilli and salt. Bring to a boil and cook for 40 minutes.
  3. Remove the chicken and mix the soup with a blender until the mixture is smooth. Book warm.
  4. Cut the chicken into strips. Drain the corn. Detail the avocado and pepper in cubes. Make soup in bowls. Add chicken, corn, avocado and pepper . Finish with a little cream and drops of spicy sauce. Serve immediately.
