Ingredients
- 12 Raw shrimp (fresh or thawed)
- 1 Egg
- 100 g Flour tempura (in Asian groceries or on the Internet)
- 2 tbsp. soup Sweet paprika2 tbsp. soup Espelette pepper
- 1 C. coffee Ground pepper
- 1 individual bottle Sparkling water well iced
- 2 to 3 L Frying oil
- Flower of salt
For the Sauce :
- 100 g Good tomato sauce (not too liquid)
- Soya sauce
- Sesame oil
- Sesame seeds
Directions :
- Start this shrimp recipe with spicy tempura by placing the sparkling water in the freezer for a few minutes to keep it cold.
- Decorate the shrimp leaving the whole tail. Make 2 incisions on the belly to avoid that they curl during cooking.
- The sauce: Mix the coulis with a 1 tbsp. soy and 1 tbsp. coffee of sesame oil. Add some sesame seeds.
- In a frying pan, heat a large amount of cooking oil. While the oil is heating, prepare a grid placed over a dish. Break the egg into a large bowl and beat with two pinches of salt. Add 15 cl sparkling water well iced. Sprinkle with tempura flour, spices, and stir quickly.
- When the oil is hot, take each shrimp by the tail, soak it generously in the dough, then dip it in the frying bath for 2-3 minutes cooking time. Remove it with a skimmer and place it on the rack to drain. You can cook shrimp in sets of 3 or 4 , turning them several times during cooking.
