Zucchini and Goat Cheese Salad

Discover our complete and balanced salad with zucchini, chickpeas, tomatoes and goat cheese… A very simple recipe to prepare, but really delicious!

Ingredients

  • 3 Medium Courgettes
  • 200g Cherry tomatoes
  • “1 box (400 g)” Chickpeas
  • 1 Apple
  • 1 Goat cheese woodcutter
  • 100g Salad sprouts
  • 1 Lemon
  • 1 teaspoon Honey
  • 1 teaspoon Curry
  • 1 tbsp Sesame seeds
  • 6 tbsp Rapeseed oil
  • Salt and pepper

Directions

  1. Start this zucchini salad recipe by washing and detailing the zucchini in strips lengthwise. Brush with oil. Grill them for a few minutes on the grill or in the frying pan. Allow to cool.
  2. Rinse and wring the salad. Wash and cut the tomatoes in half. Wash the apple, then cut it into sticks. Cut the cheese into slices.
  3. In a bowl, combine honey, oil, curry, sesame seeds, salt, pepper and lemon juice. Rinse and drain chickpeas. Add them to the bowl. Mix.
  4. Arrange the vegetables on the plates. Add the cheese slices. Top with chickpeas and their sauce. Serve immediately.
