Mini-Cheesecakes with Crème Brûlée

2 desserts in 1 … This original recipe of mini cheesecakes way crème brûlée will crack all the gourmands of the table!

Ingredients

  • 200 g Fresh cheese St Môret or Philadelphia
  • 2 eggs
  • 10 cl Whole liquid cream
  • 100 g Sugar
  • 5 cl Amaretto
  • 4 leaves (8 g) Gelatin
  • 6 c. soup brown sugar
  • 200 g Small butter biscuits
  • 115 g Butter

 

Mini-Cheesecakes with Crème Brûlée

Instructions

  1. The day before, start this recipe of cheesecakes by powdering the biscuits. Melt the butter and mix it with the biscuits. Tamp this dough in the bottom of 6 circles to dress 8 cm in diameter, arranged on a plate lined with baking paper. Store in a cool place.
  2. Heat the cream and the amaretto. Rehydrate the gelatin sheets for 10 minutes in cold water, wring them out and whisk them in the hot mixture. In the mixer, mix the fromage frais with the sugar. Add the cream mixture while whisking. Separate the whites from the yolks and incorporate them. With the beater, mount the whites in firm snow and incorporate them delicately with the whip. Pour the device on the biscuit bottoms. Store cool overnight.
  3. The next day, turn out the cheesecakes. Sprinkle them with brown sugar and flame a torch on top to caramelize them.
